The Ingredients

First of all, gather all the necessary ingredients for this recipe. Place close attention to the quantities and look for any Twist!

4 ripe bananas
1 stick unsalted butter, melted
2 eggs
1 tsp vanilla extract
1 ½ cup flour (¾ cup white flour and ¾ cup wheat flour) (T)
1 cup sugar
1 tsp baking soda
¼ tsp salt
½ tsp cinnamon
¼ tsp nutmeg
¼ cup shredded coconut (Baker’s sweetened coconut) (T)
½ cup golden (white) raisins (T)
1 granny smith apple, peeled and chopped in small bite-sized pieces (T)
¼ cup fresh cranberries (do not substitute dried cranberries) (T)
Optional – ½ cup fresh or frozen blueberries/cherries (T)

The Steps

Next, follow the steps to finalize your dish and finally be able to enjoy it!

Using the first 4 ingredients, mash bananas in food processor or in a separate bowl. Add vanilla extract and butter. Combine these ingredients, then add eggs and stir until incorporated.
For the dry ingredients, use a separate bowl, and mix all remaining ingredients, then add to the banana mixture. Pour batter into a lightly greased 8 ½ inch by 5-inch loaf pan. Garnish with fresh cranberries by slightly pushing some cranberries into the baking mixture.
Bake at 350 degrees for 50 mins. While still warm, lightly glaze top of bread with maple syrup (or agave syrup) then sprinkle with raw brown sugar. Do not glaze the sides of the bread.
Optional Glaze: Mix 1 cup confectioners’ sugar with enough water for spreading consistency and ½ tsp of vanilla extract.
