Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 2 14.5 oz. cans of College Inn reduced sodium chicken broth or any brand
  • 1 ½ cups uncooked long grain white rice
  • 1 jalapeno pepper, seeded and chopped fine
  • 4 garlic cloves, minced
  • ½ cup fresh cilantro, chopped
  • ¼ cup scallions, thinly sliced
  • 1 tsp lime zest
  • ¼ tsp fresh squeezed lime juice

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. In a medium saucepan, add first 4 ingredients and bring to a boil. Cover pot and reduce heat to low. (Use a spoon to taste the liquid to ensure that the rice has enough salt as the chicken broth already contains salt – add salt if necessary) cook for 40 minutes or until liquid is absorbed and rice is soft.

  2. Transfer rice to a large bowl, add cilantro, scallion and lime zest, combine well and add fresh squeezed lime juice.
