Israeli Couscous with Pineapple & Raisins

  • ½ cup golden (white) raisins (T)
  • 1 Tbsp extra virgin olive oil
  • 1 tsp salt
  • ¾ cup dry Israeli couscous
  • ½ cup pineapple chopped, fresh
  • ¼ cup red onion, chopped small
  • 2 Tbsp chopped cilantro (T)

Recipe Instructions

  1. Bring broth, raisins, oil, and salt to a boil in a saucepan over medium heat. Stir couscous into liquid, cover, and simmer for 10 to 15 minutes or until liquid evaporates. Remove saucepan from heat. Transfer the couscous to a large bowl. Add olive oil, pineapple, red onion and cilantro. Mix well.
