Stuffed Pork Chops

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 2 double-cut center pork chops
  • 1 tsp each, black pepper, garlic powder, dry jerk or coffee seasoning
  • 1 tsp sea salt (or salt to taste)
  • 2 tsp dijon mustard
  • 16 spinach leaves
  • 4 Tbsp gorgonzola cheese
  • 4 roasted pepper slices (in jar) or 8 sundried tomatoes (T)
  • 4 Tbsp dried cranberries (T)

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. Cut a pocket in each pork chop. Combine black pepper, garlic powder, jerk or coffee seasoning and sea salt in a small bowl. Rub into pork chops including the pocket. Brush mustard on pork chops.

  2. Insert in each pork chop - 4 spinach leaves, 1 roasted pepper slice or 2 sundried tomatoes, 1 Tbsp gorgonzola cheese, 1 Tbsp cranberries. Close pocket with one or two toothpicks.

  3. To Grill - set grill to indirect heat at 325 degrees. Grill until thermometer reaches an internal temperature of 160 degrees, turning once. Discard toothpicks. Let pork chops rest for 10 minutes before serving.

  4. To Bake - bake uncovered at 350 degrees for 35 to 40 mins or until thermometer reaches an internal temperature of 160 degrees.
