Thai Basil Salmon

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 3/4 lb skinless salmon fillet or 2 frozen salmon pieces
  • 2 inch piece of fresh ginger, chopped (T)
  • 2 Tbsp unsweetened shredded coconut
  • 5 garlic cloves
  • 1 tsp oil
  • 1 tsp mustard seeds
  • 1 cup reduced-sodium chicken broth
  • 1 cup canned fire-roasted tomatoes
  • 1/2 cup light or regular coconut milk
  • 8 basil leaves
  • 1 Tbsp brown sugar
  • 1/2 yellow bell pepper, diced
  • 1/4 cup cilantro, chopped fine

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. Wash and drain salmon and cut into 1-inch pieces. Season with sea salt, black pepper and smoked paprika. Set aside.

  2. Using a blender or food processor, pulse ginger, coconut and garlic to make a paste.

  3. Heat oil in large skillet over medium heat. Add mustard seeds to pan, stir until they start to pop, about 1 minute. Add coconut mixture to mustard seeds and stir.

  4. Add tomatoes, broth, coconut milk, basil and sugar. Bring to a boil. Reduce heat and simmer uncovered for 8 minutes, stirring occasionally. Strain sauce from the pan to remove shredded coconut and tomatoes. Using the same pan or a clean pan, add sauce back to pan and continue.

  5. Add salmon and bell pepper. Cook until salmon is opaque in center and pepper is crisp. Stir to make sure the salmon is evenly cooked, about 4 minutes. remove from stove and stir in cilantro.
