If using Tofu: drain and rinse tofu. Pat dry. Slice crosswise into 8 1/2 inch slabs. Coarsely crumble each slice in smaller pieces.
Heat oil in a nonstick skillet over high heat. Cook tofu, without stirring, until the pieces begin to turn golden brown for about 5 minutes. Gently stir and continue cooking until all sides are golden brown (4 to 7 Minutes). Set aside.
If using vegetables: Cut up your choice of vegetables and set aside.
Using a blender or food processor, pulse ginger, coconut and garlic to make a paste.
Heat oil in large skillet over medium heat. Add mustard seeds to pan, stir until they start to pop, about 1 minute. Add coconut mixture to mustard seeds and stir.
Add tomatoes, broth, coconut milk, basil and sugar. Bring to a boil. Reduce heat and simmer uncovered for 8 minutes, stirring occasionally. Strain sauce from the pan to remove shredded coconut and tomatoes. Using the same pan or a clean pan, add sauce back to pan and continue.
Add tofu or vegetables, bell pepper and spinach. Cook vegetables until lightly softened while still crisp, about 4 minutes. Remove from stove and stir in cilantro.
