Shelly’s Cranberry bread is great anytime but especially during the holidays.

The Ingredients

First of all, gather all the necessary ingredients for this recipe. Place close attention to the quantities and look for any Twist!

----------Dry Ingredients----------
2 cups flour
2/3 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
3 Tbsp sweetened shredded coconut (T)
3 Tbsp walnuts, halved
1/2 cup fresh or frozen cranberries (Do not use dried cranberries)
1 tsp cinnamon
1 granny smith apple, peeled and diced (T)
-----------Wet Ingredients---------
2/3 cup fresh squeezed orange juice
4 Tbsp or 1/4 cup melted unsalted butter
1/4 cup cholesterol-free egg product
1 tsp vanilla extract
2 tsp freshly grated orange zest

The Steps

Next, follow the steps to finalize your dish and finally be able to enjoy it!

Preheat oven to 350 degrees. Mix all dry ingredients in a large bowl.
Combine butter, egg product, orange zest, orange juice and vanilla extract in a medium bowl. Add to dry ingredients and mix well using a spatula. Mixture will be lumpy. Add to loaf pan, smooth out the top and bake for 50 minutes or until toothpick comes out clean.
Glaze with 1 Tbsp maple or agave syrup. Sprinkle with raw brown sugar. Cool and cut into 8 pieces.
