Quick Bread

Quick bread became a part of the kitchen after the invention of baking powder in 1846; before that, making bread and cakes were not easy as they required yeast. Quick bread is easy to make as it can be baked immediately after it is prepared. It is chemically leavened with baking soda or baking powder instead of yeast. Quick breads are a hybrid between a bread and a cake.

Quick breads include cakes, brownies, muffins, and cookies—as well as banana bread, zucchini bread, cheddar biscuits, scones, and Irish soda bread.

There are 3 types of Quick bread:

(1) pour batters: batter is thin and poured directly into a baking pan. (2) drop batters: very thick and needs to be scooped into a baking pan.(3) soft dough: can be rolled or shaped by hand.

At Shelly’s Cuisine, our quick bread is divided into two categories. Sweet and Savory.

During the pandemic, Banana bread was a very popular recipe. It is definitely #1 on our sweet list. Shelly’s Banana Bread is a little different from others as she Twists It by using both white and wheat flour. She also adds white raisins, shredded coconut, fresh cranberries, and granny smith apples. A glaze of maple syrup and raw brown sugar tops off this banana bread.

Irish Soda Bread is a favorite of most, however at Shelly’s Cuisine; we add a Twist that strays away from the traditional Irish Soda bread. Our Twist results in a cross between a bread and a cake similiar to a scone but a lot softer. We still use the traditional ingredients like raisins and caraway seeds, but we add sour cream and shredded coconut.

Do not forget about cookies. Try our Earl Grey Tea Cookies which are a delight at any tea party; or simply great with your morning tea. Loose tea leaves are the main ingredient. Yes, just drop the leaves into your batter.

7-Up Cake is a Southern classic and there is no need to buy it at the store. Shelly’s version of this Southern delight is easy to make. Most people are not aware that you can use soda to bake a cake. Yes, you can! The 7-Up soda acts as a leavening agent (instead of baking soda or powder) to help the cake rise. The 7-Up cake is a dense but moist pound cake and it is normally made in a Bundt pan. Shelly Twists this cake with shredded coconut, Vietnamese cinnamon, fresh nutmeg and pure vanilla and almond extracts. On the savory side, we have our most popular Bacon Cheddar Bread. If this is your first time making this bread, we suggest that you make at least two loaves; because it will disappear in minutes. Bacon is available in so many flavors, including apple, maple, and mesquite; so imagine the different flavors in this bread. Zucchini Bread is one of Shelly’s Cuisine favorites and is an easy quick bread to make. The hardest part is waiting for it to come out of the oven.

The Cheddar Loaf or Cheddar Biscuits are other forms of savory breads; it just depends on whether you use a loaf or a muffin pan to make this recipe. Shelly puts a Southern Twist on this recipe by adding green chilies, tomatoes and jalapeno peppers.

I just have to say that this bread is FANTASTIC!! It truly doesn’t last that long after coming out of the oven. You have to try it.

We just made this bread again after a few months. Every time I taste it I want more. It is delicious every time?
